Thomas has worked across in some of the best restaurant throughout the country including both James Beard and Michelin Star Awarded restaurants. He specializes in sourcing the highest quality local ingredients with Mediterranean flare, specifically French and Italian flavors. Thomas got his first his Executive Chef job at 23 years old, and promptly one "Best Restaurant in Western Massachusetts” 4 years in a row. Following his move down to Florida, he won SRQ best new restaurant as Concept Chef. Recently, he was featured in the prestigious “Outstanding in the Field”, leading a group or 8 chefs for a one-of-a-kind multi-course dinner on the beautiful beaches of Anna Maria Island. He has been featured many times in “Best of SRQ Magazine” for his innovative cuisine, scratch kitchen concepts, sustainability efforts, and use of local purveyors and farmers. He has handpicked a team of chefs and managers to execute his vision and change the culinary landscape.
